El besugo es un pez poco conocido en México, pero es un pez con una carne muy delicada, de un estupendo sabor. - Tenemos que hacer algunos preparativos:
Rebanamos un limón en rebanaditas delgaditas.
Pelamos y picamos 2 o 3 dientes de ajo y los ponemos en una ollita con 3/4 de taza de aceite de oliva y reservamos.
En un refractario grande ponemos aceite de oliva y rebanamos una cebolla y media y bastante perejil picado. - Pelamos 3 papas y las cortamos en rodajas, les ponemos sal y las ponemos a freír en bastante aceite a que se suavicen, y las escurrimos después sobre servilletas y reservamos.
Pedimos al pescadero que limpie los besugos quitándoles las escamas, cortándoles las aletas y haciéndoles unos dos cortes de cada lado.
En una taza exprimimos un limón o dos y completamos con vino blanco y reservamos. - Lavamos los besugos bajo el chorro del agua y los colocamos sobre la cama de cebolla, les ponemos sal y pimienta por dentro y por fuera. Colocamos unas mitades de rebanaditas de limón en las hendiduras de los cortes laterales. Los bañamos con el vino con limón y les espolvoreamos pan molido por encima y los metemos al horno calentado con antelación a 180º durante 30 o 35 minutos (cada horno es diferente).
- Los sacamos del horno, calentamos el aceite con los ajos picados sin que estos se vayan a quemar y estando caliente el aceite con el bañamos los besugos. Distribuimos las papas que tenemos reservadas alrededor y volvemos a meter al horno unos 15 o 20 minutos más.
