  5. 25 g harina de fécula de maíz (Maicena)

  3. Mientras se va calentando la mezcla, disolvemos la harina de fécula de maíz en un poco de leche fría y se la añadimos a la mezcla del cazo, para que se forme una crema espesa y ligada.
  4. Finalmente, añadimos la crema de nueces que tenemos reservada y seguimos cocinando a fuego lento y sin dejar de remover para que se vaya espesando y cociendo.
  5. Cuando tengamos una crema espesa y bien ligada la retiramos y la enfriamos rápidamente.
  6. La echamos en un bol que a su vez meteremos dentro de otro con agua y hielo.
  7. Una vez la crema del helado esté fría, la guardamos en la nevera hasta el día siguiente que ya podremos mantecar el helado. Si disponemos de heladora, echamos la crema en la cubeta de la heladora y lo mantecamos siguiendo las instrucciones del fabricante. Cuando el helado está casi mantecado podemos añadir trozos de nueces. Cuando termine, lo retiramos y pasamos a un tupper o recipiente hermético y lo guardamos en el congelador un mínimo de 6 horas.
  8. Sacamos del congelador la nieve y consumimos.
